3 vegetable recipes that will make your child want to eat healthy

Having a hard time getting your little one to eat vegetables? Don’t worry, there are ways to prepare dishes that your child will love and you won’t even suspect are packed with healthy ingredients. Get creative with your presentation and keep reminding your little one of the importance of healthy eating. Don’t forget to lead by example at the table too!

Prepare these vegetable recipes that will make your child want to eat healthy:

Delicious french fries with green beans

What do you need:

  • 1/2 kilo fresh green beans, ends trimmed
  • 3/4 cup panko breadcrumbs
  • 1/3 cup hummus
  • 1/4 cup grated Parmesan cheese

Mix the breadcrumbs and Parmesan cheese on a plate, then place the hummus on a separate plate. Line a greased baking sheet with heavy-duty aluminum foil. With clean fingers, hold one end of a bean and roll it in the hummus to coat it, then roll it in the cheese and breadcrumb mixture. Place covered bean on baking sheet. Repeat with the rest of the green beans.

Bake in a preheated oven (400 degrees) for 15 minutes or until desired doneness. Let cool before serving with your choice of sauce.

Honey Bacon and Roasted Carrots

What do you need:

  • 1 kilogram. carrots, peeled and chopped into 1-inch pieces Save $
  • 2 tablespoons honey or maple syrup
  • 2 strips of bacon, cut into cubes

Combine carrot pieces, honey/maple syrup and bacon in large bowl. Stir until ingredients are well combined and carrots are coated. Put the mixture on a greased baking sheet and bake at 400 degrees for half an hour. When ready, check (using a fork) to see if the desired doneness of the carrots is achieved. Let cool for a few minutes before serving. Season with a little cayenne pepper if you like.

Easy Zucchini and Pepperoni Pizza

What do you need:

  • 3 zucchini (preferably the same size), ends trimmed, cut into 3/8-inch-wide slices
  • 20 pepperoni slices, cut in half
  • 1 1/2 cups grated mozzarella cheese
  • 1 teaspoon Italian herb mix
  • 1 teaspoon Spike seasoning

Arrange the zucchini slices on a greased baking sheet (covering the pan completely). Season slices with Spike seasoning and Italian herb mix then top with mozzarella. Grill on a preheated broiler until cheese begins to melt, about 2-3 minutes. Arrange the pepperoni slices on top and grill for an additional 3-4 minutes. Cool before slicing and serving.
